how to make chilli chicken ramen

ingredients

for the dish

2 chicken breasts

500ml chicken stock

200g soba noodles

step one

make the ramen

  1. put 400ml of boiling water into a jug + add the broth paste

  2. season the chicken with salt + pepper then place in a hot pan. sear both sides then place onto an oven tray + cook in the oven

  3. in a bowl combine sriracha, sweet chilli sauce, paprika + a dash of malt vinegar to make chilli katsu sauce

  4. thinly slice red onion, spring onion + fresh chilli

  5. boil the noodles according to the packaging instructions

  6. combine the broth with 1 tbsp of the chilli katsu sauce (or more if you like it spicy!)

  7. place the cooked noodles in a bowl + pour over the chilli ramen broth. top with bean sprouts, red onion, spring onion, coriander, chilli, sliced chicken + a wedge of lime
