method

  1. place half the oil in a wok over a high heat + stir-fry the cauliflower for 5–8 minutes until browned
  2. add the remaining oil to the pan + stir-fry the red onion + spring onions until slightly caramelised
  3. stir in the firecracker sauce + simmer to heat through
  4. divide the cauliflower between 2 serving bowls + top with the fresh ginger + coriander
